A little history
The production of foie gras is an ancestral tradition whose origins can be traced over 4,500 years back. A fresco discovered in an Egyptian tomb showed a slave feedin a goose with figs. This proves how old this tradition can be. (Saqqarâh necropolis)
The French paradox
The foie gras is rich in unsaturated fatty acids. Their consumption is recommended in our food because they cause to lower the rate of the bad blood cholesterol. A quality which could explain the exceptional longevity of the people living in the south-west of France.
